Pasta Salad with Ham & Olives

Ingredients

  • One 20-ounce package Giovanni Rana Chicken Mozzarella Tortelloni
  • 1 tablespoon kosher salt, plus more for seasoning
  • 1/2 cup warm water
  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 8 ounces thinly sliced ham
  • 2/3 cup pitted green olives, roughly chopped
  • one 12-ounce ounce jar sliced roasted red peppers, drained
  • 3 tablespoons chopped fresh parsley
  • freshly ground black pepper to taste

Preparation

Cook the tortellini according to package instructions. While the pasta is cooking, make an ice water bath: Dissolve the 1 tablespoon kosher salt the warm water in a large bowl. Add 4 cups each ice and water and reserve. In a large bowl whisk the oil and vinegar. Drain the pasta, cool in the ice water bath for 2 minutes, then drain again and transfer the tortelloni to the bowl. Add the ham, olives, peppers, and parsley and toss to incorporate. Season with salt and pepper to taste.
