Roasted Tomato & Mozzarella Tortelloni with Tomato, Spinach & Pine Nuts

Ingredients

  • One 10-ounce package Giovanni Rana Roasted Tomato & Mozzarella Tortelloni
  • 1 tbsp extra virgin olive oil
  • Fresh spinach
  • Pine nuts
  • 1 garlic clove, minced
  • 4 oz of cherry tomatoes, halved
  • 1 tbsp of fresh oregano
  • Salt and pepper to taste

Preparation

Heat 2 tablespoons of extra virgin olive oil and a garlic clove in a large skillet over medium-high heat. Add cherry tomatoes, spinach and pine nuts for a few minutes leaving them slightly wither.

Cook the Tortelloni according to package instructions and mix them with tomatoes, spinach and pine nuts. Serve with a sprinkling of oregano.
