CHICKEN MOZZARELLA TORTELLONI and summer garden tomato

Ingredients

  • One 10-oz package Giovanni Rana Chicken Mozzarella Tortelloni
  • 6 tbsp extra virgin olive oil
  • 1 clove garlic, crushed
  • 4 ripe tomato, cubed
  • 3 sprigs fresh oregano
  • 6 oz your favorite olives
  • Salt and freshly ground black pepper to taste

Preparation

In a large skillet, heat the oil with garlic on medium-high flame. After 1 minute, oregano and chopped tomato and sauté 4-6 minutes. Season with salt and pepper to taste.

In the meantime, cook the Tortelloni according to package instructions and drain, reserving a spoon of the pasta cooking water. Add Tortelloni to the skillet, toss gently for 1 minute adding a spoon of the cooking water. Divide Tortelloni among plates and serve.
