Preheat oven to 425° F. Line a baking sheet with parchment paper or foil.
Place carrots in a single layer on prepared baking sheet. Drizzle with olive oil, and then sprinkle with salt and pepper. Place in the oven and bake until golden brown, about 25 to 35 minutes. Remove the pesto from the refrigerator 10 minutes before the carrots are ready, and stir.
Transfer the carrots to a serving plate, season with pesto and serve.
