Heat the oil in a non-sticking frying pan; add onion wedges and toss on medium high heat for 4-5 minutes until softened. Add speck and cook two more minutes until the speck is fragrant and crispy. Sprinkle with whisky, stir and season with salt and pepper to taste.
In the meantime, cook the Tortelloni according to package instructions and drain, reserving a ladleful of the pasta cooking water. Add pasta to the pan and stir gently, adding some of the pasta water if you need to loosen the sauce.
Sprinkle with smoked paprika, divide Tortelloni among plates and serve.
