Potatoes patties with turkey, Alfredo sauce and cranberries

Ingredients

  • One 10-ounces container Giovanni Rana Alfredo Sauce
  • 2 cups fresh cranberries
  • ½ cup granulated sugar
  • ½ cup water
  • 2 cups leftover mashed potatoes
  • 2 eggs
  • 8 oz cooked turkey shredded
  • 2 tbsp butter
  • Salt and pepper to taste

Preparation

Add cranberries, sugar, water, salt and pepper to a medium saucepan, and then stir to combine. Bring to a boil over high heat, then reduce heat to medium-low and simmer for about 10 minutes.

In a large bowl, combine eggs and mashed potatoes. Divide into ½ cup portions and form into a patty. Preheat a griddle or frying pan to medium. Add enough oil to lightly grease. Place patties on griddle and fry until crispy on each side and heated through (about 5 minutes per side).

Melt the butter in a frying pan, add turkey and toss to combine; cook until heated through and lightly crispy, for about 2-3 minutes. Heat the Alfredo Sauce according to package instructions.

Place 1 crispy potato patty on each plate and stack turkey on top. Evenly divide Alfredo sauce on top of each stack. Top with cranberries and serve.
