Prosciutto & Cheese Tortelloni with tomatoes, feta and cucumber

Ingredients

  • One 10-oz package Giovanni Rana Prosciutto & Cheese Tortelloni
  • 2 cups cherry tomatoes cubed
  • 1 small cucumber peeled deseeded and cubed
  • ½ cup feta cheese crumbled
  • 1 ½ tbsp dried oregano
  • 5 tbsp extra virgin olive oil
  • Salt and pepper to taste

Preparation

Put tomatoes and cucumber in a big bowl, season with salt and pepper, 1 tbsp oregano and extra virgin oil, then mix all and set aside.

Cook the Tortelloni in a large saucepan according to package instructions and drain, then transfer the Tortelloni to the bowl.

Divide between plates, toss to combine, garnish with the crumbled feta and extra oregano and serve.
