Pesto-Grilled Salmon Over Greens

Ingredients

  • four 8-ounce, skin-on center-cut salmon fillets
  • kosher salt and freshly ground black pepper to taste
  • one 7-ounce container Giovanni Rana Basil Pesto
  • salad greens

Preparation

Preheat the oven to 400°F. Arrange the salmon, skin-side down, on a foil-lined baking sheet. Season generously with salt and pepper. Brush the tops of each salmon fillet with a generous amount of pesto (it’s OK if it runs down the sides!). Roast until the salmon is just cooked through, 12-13 minutes. Serve the salmon over salad greens.
