Italian Sub Pasta Salad

Ingredients

  • one 10-ounce package Giovanna Rana Prosciutto & Cheese Tortelloni
  • 1 tablespoon kosher salt, plus more to taste
  • 1/2 cup warm water
  • 6 tablespoons extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon grainy Dijon mustard
  • 1/2 cup sliced pitted green olives, or a combination of green and black
  • ¼ cup sliced peppadew peppers
  • ¼ pound salami, thinly sliced
  • ¼ pound provolone cheese, cubed
  • 3 pepperoncini peppers, sliced
  • ¼ cup finely chopped parsley
  • freshly ground black pepper to taste

Preparation

Cook the tortellini according to package instructions. While the pasta is cooking, make an ice water bath: Dissolve the 1 tablespoon kosher salt in 1/2 cup warm water in a large bowl. Add 4 cups each ice and water and reserve. Drain the pasta, cool in the ice water bath for 2 minutes, then drain again.

In a large bowl whisk the oil, vinegar, and mustard. Add the pasta, olives, peppers, salami, cheese, pepperoncini, and parsley and toss to combine. Season with salt and pepper to taste.
