CHEESE LOVERS TORTELLONI WITH APPLE AND SAUSAGE

Ingredients

  • One 10-oz package Giovanni Rana Cheese Lovers Tortelloni
  • 6 tbsp extra virgin olive oil
  • 1 clove garlic, crushed
  • 1 heaped cup Italian sausage, chopped
  • 1 red apple, cubed
  • ½ cup dry white wine
  • 2 sprigs rosemary
  • Salt and freshly ground black pepper to taste

Preparation

In a large skillet, heat the oil with garlic on medium-high flame. After 1 minute, add sausage, rosemary, and sauté 4-6 minutes on high flame until cooked and crispy. Lower the flame, add the apple, toss for 1 minute and add wine. Cook until wine reduces by half, 4-5 minutes. Season with salt and pepper to taste.

In the meantime, cook the Tortelloni according to package instructions and drain, reserving ½ cup of the pasta cooking water. Add Tortelloni to the skillet and toss gently for 1 minute adding a few spoons of the cooking water to loosen the sauce if needed.

Divide Tortelloni among plates and serve.
