4 Cheese Tortelloni with pears and caramelized balsamic vinegar


Ingredients:


1 package Giovanni Rana 4 Cheese Tortelloni

2 Bartlett (Williams) pears
3 Tbsp. unsalted butter
1 rosemary sprig
grated Parmigiano cheese

2 oz. balsamic vinegar
3-1/2 Tbsp. sugar
1 Tbsp. water

Preparation:

Peel the pears and cut in cubes. Sauté with butter in a skillet. Add finely chopped rosemary. Sauté for a few minutes. Heat the sugar and water at medium temperature. Add the balsamic vinegar. Let cook until it reduces in half. Cook the Tortelloni as directed in salt water.  Drain. Saute with the pear sauce. Garnish with drops of caramelized balsamic vinegar. Sprinkle with Parmigiano cheese.  Serve.
