Pecorino: Pecorino can be Romano, Sardo, Siciliano or Toscano. It is aromatic and depending on the maturation phase, pleasantly spicy to taste. The unaged cheese can be consumed with fruits or vegetables or served with fruit sauces at the end of a meal. The aged cheese can be grated and sprinkled over a plate of pasta or tortellini.

Mozzarella: The word “mozzarella” comes from the verb "mozzare" which means to crop. This explains part of the production of this cheese. The dough is in fact cropped by hand as it is pinched between the thumb and the forefinger. The mozzarella used by Giovanni Rana is prepared from cow's milk.
