Grana Padano: The name Grana is attributed to the cheese because of its "grainy" consistency. Grana Padano is a cylindrical, cooked, semi-fat hard cheese that is slowly matured. It may be used as a table cheese or for grating. Grana Padano has a fragrant and delicate taste that makes it ideal for Giovanni Rana's products. In order to control the product 100%, only complete wheels of Grana Padano are used.
Ricotta: The name "ricotta" means "cooked again" in Italian. This refers to the second processing of the whey that comes from the production of cheeses such as mozzarella and provolone. It's primarily made with cow's milk. Ricotta is a mild cheese that pairs well with vegetables such as spinach, thus Ricotta & Spinach Tortelloni. The ricotta comes from producers chosen directly by Giovanni Rana.
Gorgonzola: The word “Gorgonzola” comes from the name of a small village near Milan where it was first made. The cheese is made only with the milk from two distinctive regions: Lombardia and Piemonte. There are two kinds of Gorgonzola cheeses: a sweet one and a piquant one. Both have a very unique flavor. Gorgonzola is frequently used in a 4 cheese sauce and pairs well with walnuts. Giovanni Rana chooses only the best Gorgonzola for his products such as 4 Cheese Tortelloni, and Gorgonzola & Walnut Tortellini. In order to control the product 100%, only complete forms of Gorgonzola cheese are used.
